Salento cuisine for all pockets and needs
A visitor who spends a holiday in Salento should not fail to go in search of the traditional dishes that are on offer in every town, city or village.
Salento’s cuisine, except for the area around Gallipoli where traditionally sea fishing was an important plank of the economy, is predominantly a land-based cuisine. Farmers’ harvests, plentiful and varied thanks to a generous and fertile soil, are the basis for the most appetizing concoctions - orecchiette with tomato sauce, or – in winter – with turnips, the “pitta di patate” (a potato pizza), the rustic stuffed pizzas, the “pittule” (fried dumplings), the “pomodori scattarisciati” (pan fried tomatoes), fava beans with chicory, “ciceri e tria” (ribbon shaped pasta with chickpeas), the “ciambotta” (a vegetable stew) and much more!
A wide spectrum of smells and flavours that the gourmet visitor will never forget. There are many restaurants within a few kilometres of our B&B, from the most economic to the more upmarket, and we will be happy to advise you or help you with your choice. Also, from this year, only 5 minutes by car from Il Palmento, it’s also possible to taste traditional dishes at Pina’s “home restaurant”.
Pina is a Salento housewife who will amaze you with typical recipes, passed on from generation to generation. Don’t expect nouvelle cuisine portions… here modest quantities don’t exist!
